Cauliflower Rice

Makes 1 serving  

 

Ingredients: 

Cauliflower

 

Directions: 

Grab a regular cheese grater to grate the raw cauliflower into small, rice-sized pieces or use a food processor to pulse the cauliflower into rice-sized pieces. Put 1 to 2 tsp olive oil or grapeseed oil, 1 tsp of herb/spice, (such as Mrs. Dash Garlic and Herb spice or any flavoring you chose) in with cauli-flower and intergrate well. Put into non-stick skillet and brown, could take as long as 10 to 15 minutes to get to a nice brown stage. Viola! Easy, easy, easy and yummy.

Popcorn Cauliflower

Makes several servings

 

Ingredients: 

1 head of cauliflower 

3 tablespoons olive oil 

2 tablespoons Mrs. Dash Table Blend 

 

Directions: 

Preheat oven to 450°F. Cut out and discard cauliflower core and thick stems. Trim remaining cau-liflower into florets the size of pop-corn. Toss thoroughly in a bowl with olive oil and Mrs. Dash Table Blend. Spread cauliflower on a sheet pan and roast for approximately 60 minutes, or until nicely browned. Turn three or four times during roasting. The browner the florets, the sweeter they will taste. Serve immediately.

Jicama “Fries”

Makes 1 serving

 

Ingredients: 

2 jicama, peeled, sliced into thin strips 

1 T olive oil 

1 T paprika 

1 tsp onion powder 

1/2 tsp salt 

1/4 tsp chili powder (or less) 

 

Directions: 

In a large bowl, toss all ingredients together until fries are well coated. Set out on a serving tray and enjoy!
